My "Famous" Guacamole
I've had several requests for my guacamole recipe (though I think my mom would prefer I not share it and just make it for her) so, I've created a step-by-step illustration for those of you that would like to try it out. I think it's delicious - let me know if you agree!
Cut the avocado in half (lengthwise). You should be able to twist the two halves apart. If you use your knife to strike the pit, you should be able to twist the pit out with the knife. Save one of your pits for later - there is a trick I learned that I will share with you!
Using a tablespoon, scoop out the inside of your avocados and put them into a medium sized bowl.
Use a hand masher or a fork to mash your avocados. They should have minimal chunks and be somewhat light and fluffy.
Chop your tomato, onion, jalapeno and cilantro and add to the bowl with the avocados.
Ingredients:
2 ripe Hass avocados - Ripe avocados are black in color and you should be able to squeeze them.
1 medium tomato
1/4 medium red onion
1/2 cup chopped cilantro (coriander) more or less to taste - If you aren't big on cilantro, you can try substituting flat leaf parsley.
2 limes
1 medium jalapeno - I didn't have one on hand so I used jar jalapenos (about 8-10 slices)
kosher salt
Squeeze 2 limes over everything.
Hint: to get the most juice out of your limes, roll them with the ball of your palm on a hard surface before you cut them. Cut them on the short side and squeeze!
Stir all of your ingredients together and add the salt to taste. I use about a half of a tablespoon.
Remember that pit you saved earlier? Put it at the bottom of your guacamole and it will help keep it fresher longer!

Finally, when avocado comes in contact with the air, it wants to turn brown. To help keep that from happening, cover your guacamole with plastic wrap and make sure to press it down so that it is touching the entire surface of the guacamole.
Refrigerate for about an hour, serve with tortilla chips and enjoy!

England, September 2009
It all began with my first solo flight overseas from Baltimore to New York and then on to London,
I took a short 4 hour bus ride from Heathrow to Norwich where Heather came to pick me up. She did pretty well with driving on the left (wrong) side of the road! After a nap, we ventured out for my first walking tour of Norwich. We went to a wonderful Indian restaurant, dropped by her office where she got scolded for coming in on her day off and I was chastised for referring to Norwich as quaint (I didn't mean it as an insult, I swear!), then saw the first few of the Norwich 12.
I was excited to be spending time in Norwich, UK with Heather and Nick in the first place but then they surprised me by hiring a boat for the day to cruise down the water in The Broads. Was a wonderful, relaxing time and I can't say thank you enough!

There was so much wildlife to see along the way and while the Kingfisher illuded all 3 of our cameras, we did see it twice I swear!
"The Moms" arrived the next day and Heather and I drove the 2 hours to pick them up in London. We stopped for lunch on the way back where we enjoyed some delicious sandwiches and ginger beer.
After they had their naps, it was time for "Tour of the Norwich 12" by Heather Lindsay (Round 2 for me!).
The next day we were off to watch Heather and Nick go indoor skydiving with Charlotte and James!

I was fortunate enough to get to meet Nick's parents, Janet and Peter and tour Cambridge with them. They were all such wonderfully welcoming and genuine people.
Our time in England was well spent yet still too short. Nick and Heather were gracious hosts and I had a great time with their kitties Max and Paddy! 
The cab came the next morning at 4AM to take us the 2 hours back to London where we jetted off to Barcelona!
